Abstract: | A Wish and Cook, sediada em Portugal, teve como visão transformar a experiência
que o cidadão comum tem do mercado da restauração, tornando-a
personalizável e acessível a qualquer hora e em qualquer lugar. Assim, e em
co-promoção com a Universidade de Aveiro, surgiu o projeto “Cook4Me”
que tem como objetivo desenvolver uma cozinha completamente automatizada
e capaz de fornecer refeições caseiras para take away.
Olhando para a cozinha, na preparação e entrega de uma refeição há vários
pontos pelos quais se tem de passar, crucialmente: escolha e doseamento
dos ingredientes a utilizar (alimentos e temperos), confeção da receita, empratamento,
entrega da refeição e lavagem dos utensílios. Nesta dissertação
o foco centra-se no tratamento dos temperos, concretamente em 4 ações
cruciais: como armazenar os temperos, como os moer (caso seja necessário),
como os dosear e por fim, como os depositar no local de confeção da
refeição.
No desenvolvimento deste tópico começa-se por perceber quais as necessidades
que o projeto tem no que ao módulo dos temperos diz respeito. Tendo
as necessidades e os requisitos base fez-se um estudo do mercado atual de
forma a agrupar diversas possíveis soluções para as ações consideradas cruciais.
De seguida foi desenvolvido o conceito para suprimir as necessidades do
projeto sempre tendo em conta tanto os requisitos das ações cruciais como
a futura implementação do módulo em toda a cozinha. Neste desenvolvimento
acabou por se dividir o módulo em dois subsistemas: um sistema fixo
que deverá armazenar, moer e dosear os temperos; um sistema móvel que
deverá colocar os especiarias doseadas num local acessível a que um braço
robótico as possa recolher e depositar no lugar de confeção.
Numa fase final foi possível realizar um protótipo físico do sistema fixo, isto
é, do sistema de armazenamento, moagem e dosagem. Os resultados obtidos
nos testes de protótipo demonstram que o conceito é possível, para
além disso, os testes permitem também salientar alguns pontos que podem
ser melhorados no produto final de maneira a garantir o seu correto funcionamento
a longo prazo. Wish and Cook, based in Portugal, had a vision to transform the experience that the common citizen has of the restaurant market, making it customizable and accessible anytime and anywhere. Thus, and in co-promotion with the University of Aveiro, the "Cook4Me" project emerged, which aims to develop a fully automated kitchen capable of providing home-cooked meals for take away. Looking at the kitchen, in the preparation and delivery of a meal there are several points through which one has to pass, crucially: choosing and dosing the ingredients to be used (food and seasonings), confection of the recipe, dish preparation, delivery of the meal and washing of utensils. In this dissertation, the focus is on the handling of seasonings, specifically on 4 crucial actions: how to store the seasonings, how to grind them (if necessary), how to dose them and finally, how to deposit them in the place where the meal is prepared. In the development of this topic, we start by understanding the needs that the project has regarding the spices module. Having the needs and the basic requirements, a study of the current market was made in order to group several possible solutions for the actions considered crucial. After that it was developed the concept to suppress the project needs always having in account both the requirements of the crucial actions and the future implementation of the module in all the kitchen. In this development the module was divided into two subsystems: a fixed system that should store, grind and dose the spices; a mobile system that should place the dosed spices in an accessible place so that a robotic arm can collect and deposit them in the confection place. In a final phase, it was possible to make a physical prototype of the fixed system, i.e. the storage, grinding and dosing system. The results obtained in the prototype tests demonstrate that the concept is possible. Furthermore, the tests also allow us to highlight some points that can be improved in the final product in order to guarantee its correct functioning in the long term. |
