Abstract: | A utilização de revestimentos poliméricos em rolhas de cortiça é uma prática
generalizada na indústria de produção de rolhas de cortiça como forma de
melhoria de qualidade visual e propriedades isolantes da rolha. O trabalho
consistiu em determinar em que extensão o revestimento influencia as
propriedades de molhabilidade da rolha de cortiça, como forma de minimizar
possíveis transferências de compostos indesejáveis desta para o vinho. Foi
ainda avaliada a alteração de cor das rolhas e a estabilidade térmica dos seus
constituintes quando submetida a um processo de envelhecimento acelerado
térmico de 150ºC durante 24h como forma de simular o envelhecimento natural
a que a rolha está sujeita.
As análises de superfície consistiram na determinação das energias de
superfície e respectivas componentes polar e dispersiva através do método de
OWRK, com o objectivo de construção de um Wetting Envelope para as
diferentes amostras. Para isso foram medidos ângulos de contacto de Água,
Formamida e Diiodometano para cada uma das amostras. Foi determinada a
tensão superficial de soluções hidroalcoólicas, cujos valores das componentes
polar e dispersiva foram situados no Wetting Envelope como forma de simular
a interacção de uma rolha de cortiça e o vinho engarrafado.
Observou-se a melhoria de impermeabilidade facultada pelos revestimentos
em relação à cortiça natural e lavada, assim como as diferenças entre os
mesmos. Registaram-se valores de tensão superficial a variar entre 8,27 e
17,1 mN/m, este resultado explicita a diferença entre as características de
molhabilidade de cada uma das amostras estudadas.
Foram efectuadas análises espectroscópicas de UV/Vis, FTIR-ATR e FTRaman
às amostras de cortiça, antes e depois de submetidas a um tratamento
de envelhecimento acelerado. A análise de UV/Vis antes e após
envelhecimento permitiu caracterizar a alteração de cor nas amostras, esta foi
quantificada pela diferença de espectros no comprimento de onda de 457nm,
através do qual foi calculado o PCN. As Amostra 5 e 6 correspondentes a
rolhas lavadas apresentaram os valores de PCN mais elevados, 135% e 103%
respectivamente. Sendo possível observar o efeito de protecção conferido
pelos revestimentos através do PCN obtido para as amostra revestidas que se
situou entre os 25% e 94%. Concluiu-se que a extensão do envelhecimento da
rolha está relacionada com a homogeneidade do filme de revestimento.
A espectroscopia de FTIR-ATR e FT-Raman, permitiu observar a estabilidade
térmica da suberina comprovada pelo aumento da percentagem de ligações
pertencentes à suberina, assim como a perda de ligações relacionada
maioritariamente com a degradação de extractivos e hemiceluloses. The use of polymeric coatings in cork stoppers is a widespread practice in the cork industry as a way of improving visual quality and insulating properties of cork. This work consisted on determining in what extent the coating influences the wetting properties of cork, so as to minimize possible transfer of undesirable compounds from cork to wine. Was also evaluated the color change of corks and thermal stability of its constituents when submitted to a thermal accelerated aging process at 150ºC for 24 hours as a way to simulate the natural aging of the cork. The surface analysis consisted in determining the surface energy and its polar and dispersive components by the method of OWRK, with the aim of building a Wetting Envelope for the different samples. To achieve this were measured contact angles of water, formamide and diiodomethane for each sample. Surface tensions of water-alcohol solutions were determined, and the values of polar and dispersive components were located in the Wetting Envelope as a way to simulate the interaction of a cork and the wine when bottled. It was observed the improvement in impermeability provided by the polymeric coatings in comparison to natural and bleached cork stoppers. The values of surface tension vary between 8.27 and 17.1mN/m, this result shows the difference between the wetting characteristics of the different samples of cork stoppers. Spectroscopic analysis of UV/Vis, FTIR-ATR and FT-Raman was applied to the samples of cork, before and after undergoing an accelerated aging treatment. The analysis of UV/Vis before and after aging allowed characterizing the color change in the samples, this was quantified by the difference intensity in the spectrum at a wavelength of 457nm, through which was calculated the PCN. Samples 5 and 6 of bleached cork stoppers had PCN values of 135% and 103% respectively. Was possible to observe the protective effect conferred by the coatings through the PCN, which for the coated sample stood between 25% and 94%. It was concluded that the extent of aging of the cork is related to homogeneity of the coating film. The FTIR-ATR and FT-Raman spectroscopy allowed observing the thermal stability of suberin evidenced by the increase in the proportion of links belonging to suberin, as well the loss of links is mostly related to the degradation of extractives and hemicelluloses. |
