Abstract: | O setor da restauração desempenha um papel de extrema relevância no setor
do Turismo, contribuindo significativamente para o crescimento da atividade
turística num determinado destino. No contexto atual de constante evolução e
mudança global, é necessário que todos os setores se adaptem à inovação. A
pandemia de Covid-19 impactou profundamente o setor da restauração,
forçando-o a se ajustar às necessidades dos seus clientes como parte da sua
recuperação pós-pandemia. Essa adaptação torna-se uma justificação
convincente para a importância da inovação no setor, em busca da atração de
mais visitantes. Além disso, nos dias de hoje, a inovação é um dos principais
atrativos para os turistas visitarem um determinado estabelecimento de
restauração para degustarem de uma refeição e obterem experiências
gastronómicas diferenciadas.
Deste modo, o estudo “Restaurantes do Futuro: Inovações Tecnológicas,
Sustentáveis e de Estratégias de Marketing” apresenta como principal objetivo
analisar a importância da implementação de inovações tecnológicas, de
técnicas de marketing e de sustentabilidade no setor da restauração. O estudo
também aborda as vantagens, desvantagens, a recetividade e os desafios da
implementação destas inovações, focando-se particularmente nas perspetivas
dos gestores de restaurantes. A metodologia utilizada para a concretização dos
objetivos do estudo, centrou-se na aplicação de um inquérito por questionário
ao setor da Restauração e Similares no município de Aveiro e de Ílhavo,
procurando a viabilidade das inovações nas cidades em crescimento turístico.
A investigação realizada em restaurantes desta área específica revelou que a
implementação de inovações no setor da restauração ainda é limitada. Os
principais obstáculos identificados pelos gestores de restaurantes incluem o
elevado custo das inovações, falta de necessidade percebida e falta de tempo.
Apesar disso, a maioria dos gestores reconhece os benefícios potenciais dessas
inovações, como a capacidade de atrair novos clientes e impulsionar o turismo
na região. The restaurant industry plays an extremely important role in tourism industry, contributing significantly to the growth of tourist activity in a given destination. In the current context of constant evolution and global change, it is necessary for all sectors to adapt to innovation. The Covid-19 pandemic has deeply impacted the restaurant industry, forcing it to adjust to the needs of its customers as part of its post-pandemic recovery. This adaptation becomes a compelling justification for the importance of innovation in the sector in order to attract more visitors. Moreover, in today’s world, innovation is one of the main attractions for tourists to visit a particular dining establishment to enjoy a meal and have unique gastronomic experiences. The main objective of the “Restaurants of the Future: Innovations in Technology, Sustainability and Marketing Strategies” study is therefore to analyse the importance of implementing technological innovations, marketing techniques, and sustainability in the restaurant sector. The study also addresses the advantages, disadvantages, receptiveness, and challenges of implementing these innovations, with particular focus on the perspectives of restaurant managers. The methodology used to achieve the study’s objectives was centred on a questionnaire survey of the restaurant and similiar sector in the municipalities of Aveiro and Ílhavo, looking at the viability of innovations in cities experiencing tourism growth. The research carried out in restaurants in this specific area revealed that the implementation of innovations in the restaurant sector is still limited. The main obstacles identified by restaurant managers include the high cost of innovations, lack of perceived need and lake of time. Despite this, most managers recognize the potential benefits of these innovations, such as the ability to attract new customers and boost tourism in the region. |
