Abstract: | Este trabalho teve como principal objetivo o desenvolvimento de um sensor de
índice de refração apto para a monitorização de fermentações de vinhos de forma
automática e adaptado para ser inserido em cubas utilizando um tampão DIN50.
O sensor foi desenvolvido numa perspetiva de baixo custo e de baixo perfil, visando
a sua utilização como um sensor remoto. O sensor é baseado na reflexão total de
luz num prisma e o índice de refração é medido através do perfil da luz refletida,
detetado por um dispositivo de carga acoplada com 3647 pixéis em linha. O perfil
da luz corresponde a variação da intensidade da luz refletida que difere consoante
o índice de refração da amostra. Através de um algoritmo desenvolvido, o sensor
obtém uma medição do pixel correspondente à posição da transição entre a zona
iluminada e não iluminada do perfil da luz refletida. O algoritmo desenvolvido é
capaz de ajustar o perfil da luz a uma função sigmoide e a partir desta calcular
o ponto de inflexão que corresponderá ao valor do pixel. Todos os cálculos são
processados no microcontrolador do sensor (ESP32). O sensor foi calibrado para
temperaturas de 12,5; 18; 23; 28 e 33 ◦C e testado sob as condições de cor do
liquido, presença de turbidez e presença de bolhas de ar. O sensor demonstrou ser
robusto perante as condições mencionadas e obteve uma resolução na ordem dos
6.0×10−5 unidades de índice de refração (UIR). Por fim foi realizado um caso de
estudo onde foi monitorizada a fermentação de um vinho tinto e onde a evolução do
índice de refração foi comparada com a evolução da densidade, parâmetro utilizado
na avaliação de fermentações. O sensor demonstrou ser capaz de avaliar a evolução
da densidade do vinho pela medição correta do índice de refração do mesmo. The focus of this work was the development of a refractive index sensor capable of monitoring wine fermentations automatically and designed to be inserted into vats using a DIN50 sealing plug. The sensor was developed from a low-cost and low-profile perspective, aiming for a remote use. The sensor is based on the total reflection of light in a prism and the refractive index is measured through the profile of the reflected light, detected by a linear charge-coupled device with 3647 pixels. The light profile corresponds to the variation of the intensity of the reflected light that differs depending on the refractive index of the sample. Using a developed algorithm, the sensor obtains a measurement of the pixel corresponding to the position of the transition between the illuminated and non-illuminated zone of the reflected light profile. The developed algorithm is able to adjust the light profile to a sigmoid function and calculate the inflection point that will correspond to the pixel value. All calculations are processed in the sensor’s microcontroller (ESP32). The sensor has been calibrated for temperatures of 12,5; 18; 23; 28 and 33 ◦C and tested under the conditions of liquid colour, presence of turbidity and presence of air bubbles. The sensor proved to be robust under the mentioned conditions and obtained a resolution in the order of 6.0 × 10−5 refractive index units (RIU). Finally, a case study was carried out where the fermentation of a red wine was monitored and where the evolution of the refractive index was compared with the evolution of the density, parameter used in the evaluation of fermentations. The sensor proved to be able to evaluate the evolution of wine density by correctly measuring its refractive index. |
