Abstract: | A interação entre o vinho e o vedante, durante o período de envelhecimento
em garrafa, é importante para a evolução da composição química do vinho e a
sua qualidade sensorial. O principal impacto da rolha para o desenvolvimento
do vinho em garrafa está relacionado com a sua transmissão de oxigénio
devido à forte influência que o oxigénio pode ter na cor, sabor e o perfil
aromático do vinho. Embora a rolha de cortiça natural possa oferecer uma
certa oxigenação benéfica para a evolução do vinho, a sua variabilidade pode
conduzir numa maturação heterogénea dos vinhos durante o estágio em
garrafa. Uma abordagem possível para a resolução deste fenómeno é o
desenvolvimento de um tratamento de superfície adequado que permita a
redução e homogeneização das taxas de transmissão de oxigénio, que vai de
encontro às necessidades do produtor de vinho. No presente projeto foi
otimizada a formulação do tratamento de superfície à base de cera de abelha,
e secundariamente, foram analisados tratamentos de superfície alternativos.
Finalmente, os tratamentos otimizados foram comparados com diferentes
rolhas e vedante existentes no mercado. Com a caracterização da transmissão
de oxigénio das diferentes formulações desenvolvidas, pelos métodos de
colorimetria e quimiluminescência, verificou-se que formulações à base de
cera de abelha contribuem consideravelmente para a melhoria da capacidade
de vedação das rolhas de cortiça natural, oferecendo uma transmissão de
oxigénio mais consistente para uma maturação mais gradual e homogénea
dos vinhos em garrafa. Contudo, para a aplicação do tratamento ser bemsucedida
certas condições têm de ser asseguradas, pois grande parte do
sucesso do tratamento reside no modo com que é aplicado. The interaction between the wine and the stopper, during the period of aging in bottle, is important for the evolution of the chemical composition of the wine and its sensory quality. The main effect of the stopper to the development of wine in bottle is related to its permeability due to the strong influence that oxygen can have on the color, flavor, and aromatic profile of the wine. Although the natural cork stopper can offer a certain oxygenation beneficial for wine evolution, its variability can lead to heterogeneous maturation of wines during bottle aging. A possible approach to solving this phenomenon is the development of an appropriate surface treatment that allows the reduction and homogenization of oxygen transmission rates, which meets the needs of the wine producer. In the present project, the formulation of the surface treatment based on beeswax was optimized, and secondarily, alternative surface treatments were analyzed. Finally, the optimized treatments were compared with different stoppers and sealants on the market. With the characterization of the oxygen transmission of the different developed formulations, by the methods of colorimetry and chemiluminescence, it was verified that formulations based on beeswax contribute considerably to the improvement of the sealing capacity of natural cork stoppers, offering an oxygen transmission more consistent for a more gradual and homogeneous maturation of wines in the bottle. However, for the application of the treatment to be successful, certain conditions must be ensured, as a large part of the success of the treatment lies in the way in which it is applied. |
