Abstract: | Com o aumento da frequência de doenças associadas à dieta, na sociedade, surge então, a preocupação de tentar atenuar problemas que possam advir do consumo de alimentos com alto teor de hidratos de carbono, e com alto índice glicémico, como por exemplo o arroz. O arroz é constituído maioritariamente por hidratos de carbono (75 a 80%). O índice glicémico do arroz é influenciado principalmente pela sua composição química, nomeadamente pelo teor e características do amido. O arroz que registou o índice glicémico mais baixo foi o da variedade Carnise, obtendo um valor de 72,75, e a amostra que obteve o valor mais alto foi a variedade Ariete, registando 150,84. Neste estudo verificou-se que diferentes fatores podiam surtir influência nos valores de índice glicémico. Verificou-se que a amilose estava negativamente correlacionada com o aumento do índice glicémico e que, portanto, arrozes com teor de amilose mais alto registaram índices glicémicos mais baixos. Outros fatores também mostraram ter influência no valor de índice glicémico, nomeadamente, o tempo de cozedura, a absorção de água e também o processamento térmico da vaporização. With the increase of the appearance of diet related diseases, then, rises the necessity of trying to mitigate problems that might arise from the consumption of foods that are rich in carbohydrates, and high glycemic index, such as rice. Rice is composed mainly of carbohydrates (75-80%). The glycemic index of the rice is mainly influenced by its chemical composition, particularly by the content and characteristics of the starch. The variety that showed lowest GI was Carnise, obtaining 72,75 and the Ariete variety obtained the highest value, of 150,84. On this study we verified that different factors affect directly the GI values. The amylose content is negatively correlated with the glycaemic index increase, which means that rice with high amylose content obtained smaller glycaemic indexes. Other factors show to have an influence on the glycaemic index value, namely cooking time, water absorption and some thermic treatments, such as parboiling, as well. |
