Implementação do referencial GMP⁺ numa unidade de transformação de subprodutos animais

Abstract

A presente dissertação centra-se na descrição das atividades realizadas durante o estágio curricular realizado na empresa VLM Consultores, conjuntamente com um dos seus clientes. Este estágio foi desenvolvido, como parte integrante do Mestrado em Biotecnologia Alimentar e o seu âmbito insere-se na “Implementação do referencial GMP+, numa unidade de transformação de subprodutos animais”. As empresas produtoras de ingredientes para alimentação animal têm vindo a desenvolver e a adotar estratégias sustentáveis e economicamente rentáveis. A implementação do referencial GMP+ ajuda a garantir a segurança e a qualidade alimentar neste contexto, pelo que os ingredientes produzidos para alimentação animal não devem constituir qualquer perigo para a saúde humana e animal ou para o ambiente, nem ser suscetíveis de afetar negativamente a produção animal. As atividades deste estágio centraram-se no acompanhamento e na elaboração de trabalhos de pesquisa, leitura e interpretação de legislação e na preparação de documentação específica exigida pela certificação da norma GMP+ no âmbito de uma empresa cliente da VLM Consultores. Estes trabalhos envolveram linhas de orientação relacionadas com o Sistema de Análise de Perigos e Pontos Críticos de Controlo e os Sistemas de Gestão de Segurança Alimentar. Este trabalho ajudou, por um lado, à melhoria do desempenho da empresa em questão e, por outro lado, ao significativo enriquecimento do conhecimento da estagiária no que se refere à legislação vigente do setor alimentar e, em particular, na transformação de subprodutos animais

This dissertation focuses on the description of the activities carried out during the curriculum internship, which took place at VLM Consultores, together with one of its clients. This internship was developed as a part of the MSc in Food Biotechnology and its scope was the "Implementation of GMP+ Referential in an Animal By-Products Processing Unit". Companies producing feed ingredients have been developing and adopting sustainable and cost-effective strategies. The implementation of the GMP+ standard helps to ensure food safety and quality in this context, so that ingredients produced for animal feed should not pose any danger to human or animal health or the environment or be liable to adversely affect animal production. The activities within this work focused on the analysis and interpretation of relevant legislation and preparation of specific documentation required by the certification of the GMP+ standard within a client company of VLM Consultores. This work involved guidelines related to the Hazard Analysis and Critical Control Point System and Food Safety Management Systems. The activities carried out have helped, on one hand, to improve the performance of the company in question and, on the other hand, to enrich the trainee regarding her knowledge of current legislation in the food sector and, in particular, a regarding the processing of animal by-products
