Abstract: A análise da qualidade dos óleos alimentares é um factor essencial, pois a degradação dos óleos pode levar a formação de substâncias nocivas para o organismo humano. Com o aumento da degradação dos óleos ocorre um aumento do seu índice de refracção. O objectivo deste trabalho é produzir e caracterizar refractómetros em fibra óptica sensíveis a variações de índice de refracção de amostras de óleos alimentares. Os refractómetros em fibra óptica, devido às suas características intrínsecas, podem ser utilizados na monitorização da qualidade de óleos alimentares, pois possuem a vantagem de requerer pequenos volumes de amostra para análise, além de não contaminarem a amostra e fornecerem resposta em tempo real. Neste trabalho são usadas redes de longo período (LPG) e redes de Bragg (FBG) corroídas devido à sua sensibilidade a índices de refracção do meio externo. Estas são mergulhadas em amostras de óleo de fritar, degradado e não degradado. As amostras de óleo foram caracterizadas pela análise dos compostos polares totais. O índice de refracção dos óleos é superior a 1,47, nesta zona uma LPG comum não apresenta normalmente sensibilidade, sendo necessária a deposição de uma nanocamada de material orgânico sobre a fibra. A resposta da LPG é modificada consoante o índice de refracção e a espessura do filme. A deposição do filme modifica os índices efectivos dos modos de bainha, melhorando assim a resposta da rede a variações do índice de refracção do meio externo maiores que o índice de refracção da bainha (n = 1,457). A técnica de Langmuir-Blodgett foi utilizada para a deposição da nanocamada. O composto depositado foi o ácido tricosenóico, o qual possui comprimento molecular de aproximadamente 2,7 nm, que define a espessura de cada monocamada. A caracterização dos óleos também é feita através de redes de Bragg em fibra óptica corroída. A corrosão, feita usando ácido fluorídrico, torna a rede de Bragg sensível ao índice de refracção do meio externo. ABSTRACT: The analysis of the quality of food oils is of paramount importance, because the degradation of oils can take the harmful substance formation for the human organism. With the increase of the degradation of oils an increase of its refractive index occurs. The objective of this work is to produce and to characterize optical fiber refractometers sensible to variations of refractive index of food oil samples. The optical fiber refractometers thanks to the intrinsic characteristics make them suitable for monitoring the quality of frying oils, therefore they possess the advantage to require small volumes of sample for analysis, beyond not contaminating the sample and supplying the response in real time. In this work they are used a long period grating (LPG) and an etched fiber Bragg grating (FBG) because of their sensitivity to refractive index of the external media. These are dived in to frying oil samples, degraded and not degraded. The oil samples had been characterized by the analysis of total polar components. The refractive index of oil is above 1,47. In this region, the LPG does not show enough sensitivity. To resolve this problem we have make a deposition of a thin film of an organic material on the fiber. The response of LPG is modified according to the refractive index and thickness of the film. The deposition of the film modifies the rates effective modes of cladding in the case ways, thus improving the response of the changes in the refractive index of the external media higher than that the refractive index of the cladding (n = 1,457). The Langmuir-Blodgett technique was used for the deposition of the nanolayer. The compound referred to as tricosenoic acid which molecular length of about 2,7 nm that will define the thickness of each monolayer. The characterization of oils also is made using an etched fiber Bragg grating. The etching, made using fluorídric acid, becomes the Bragg grating sensitive to the refractive index of the external media.
