Abstract: A produção de cerveja é uma atividade milenar, sendo que ao longo da história tem sido pautada pela constante evolução e inovação. Existem diferentes estilos de cerveja e técnicas de produção, embora a base da produção consista em utilizar grão maltado (rico em amido que por ação de enzimas originará açúcares mais simples), lúpulo (apresenta grande teor de α-ácidos, que serão isomerisados e serão responsáveis pelo amargor), água e leveduras (diferentes estirpes podem ser usadas, produzindo etanol e dióxido de carbono). O estágio curricular no âmbito desta tese de mestrado foi realizado na Cinco Chagas, uma microcervejeira sediada em Anadia, tendo já sido reconhecida com alguns prémios no estrangeiro. O estágio teve como objetivos, a aquisição de conhecimentos e competências na produção cervejeira e o desenvolvimento de cervejas específicas. O primeiro objetivo foi alcançado através da participação ativa nas várias atividades da empresa, nomeadamente as várias etapas da produção, higienização do equipamento e o engarrafamento. Quanto ao segundo objetivo, uma das cervejas desenvolvidas foi uma cerveja Gose com adição de sal verde, que consiste em salicórnia triturada e seca. Para efeitos de comparação em termos de sabor e aroma, desenvolveu-se uma cerveja com a mesma receita de base mas utilizando flor de sal em vez de salicórnia. Outra das cervejas desenvolvidas foi uma cerveja com adição de framboesas que foram adicionadas na etapa da fermentação, garantindo um perfil frutado bastante presente principalmente no aroma. Por fim, a última cerveja desenvolvida foi refermentada pelo método champanhês, que consiste na adição de uma solução altamente açucarada à garrafa e prolongada maturação, permitindo que se desenvolvam elevadas quantidades de dióxido de carbono e que posteriormente ocorra precipitação de leveduras e outro material (remuage) clareando a cerveja, sendo este material seguidamente removido (dégorgement). Esta cerveja permanece em maturação. Foram, ainda, realizadas análises às cervejas, nomeadamente, foi calculado o teor alcoólico para cada cerveja, obtendo-se valores de 5.1-6.7% para as cervejas à excepção da cerveja pelo método champanhês onde se obteve 9.4%; foi medido o pH antes e após refermentação em garrafa, não havendo alteração relevante em nenhuma cerveja; o teor de açúcares redutores remanescente da fermentação principal foi quantificado pelo método do DNS, obtendo-se valores médios de 14.7, 15.1, 18.5 e 23.6 mg/mL para as cervejas de salicórnia, cerveja de framboesa, cerveja pelo método champanhês e cerveja de sal, respetivamente. O estágio foi enriquecedor e permitiu desenvolver produtos com o potencial de virem a ser comercializados
The production of beer is an activity that has been around for millennia and throughout history has been guided by constant evolution and innovation. Different brewing styles and production techniques exist, although production is based on the same fundamental stages, namely the use of malted grain (rich in starch which by enzymatic action will give rise to simpler sugars), hops (with a high content of α-acids, which will be isomerized and will be responsible for bitterness), water and yeast (different strains can be used, producing ethanol and carbon dioxide). Cinco Chagas is a microbrewery based in Anadia, having already been recognized with some prizes abroad. The internship was aimed at acquiring knowledge and skills in brewing technology and developing specific beers. The first objective was achieved through active participation in the different company activities, namely the different stages of production, equipment’s hygienization and bottling. As for the second objective, one of the beers developed was a Gose beer with added salicornia that was crushed and dried. For comparison in terms of flavor and aroma, a beer with the same recipe was developed but using salt flower instead of salicornia. Another of the beers developed was a beer with addition of raspberries that were added in the fermentation stage, guaranteeing a fruity profile quite present mainly in the aroma. Finally, the last developed beer was fermented in the bottle through the method used in the production of champagne, which consists in the addition of a highly sugary solution to the bottle and prolonged maturation, allowing a high amount of carbon dioxide to develop and subsequent precipitation of yeasts and other material (remuage) making the beer clearer, this precipitated material being subsequently removed (dégorgement). This beer remains in maturation stage. In addition, some analyses were performed to the beers. The results obtained for the alcohol content were 5.1-6.7%, except for the beer produced by the champagne method, which showed an alcohol content of 9.4%. The pH was measured before and after bottle fermentation, with no relevant alteration in any beer. The amount of reducing sugars remaining in the beer after main fermentation was determined by the DNS method, with average values of 14.7, 15.1, 18.5 and 23.6 mg/mL for salicornia beer, raspberry beer, beer produced by the champagne method and salt beer, respectively. The internship was rewarding and allowed to develop products with the potential to be marketed.
